Limited Cellar Release: Barrel Reserve Dabinett

Aged for 15 months in rye whiskey barrels. This native yeast fermented, single varietal cider spotlights high tannin Dabinett apples from Dragon Orchard in the UK. Balanced with a touch of Vermont maple.

Tasting notes: caramel, hay, earthy, sweet dew, oak. 

Single varietal ciders are difficult because few apples have all the components to make a balanced cider - tannin, acidity, fruit, aromatics and secondary flavors. Also because no single apple has the market following of Pinot Noir grapes or Mosaic hops. We love the Dabinett because of its earthiness and because its tannins round out nicely with barrel aging. It's also a favorite amongst orchardists because it is relatively simpatico to grow, especially compared to other finicky varietals, like Kingston Black.
